SOUP
After trying to find a healthy clam chowder recipe online (that still had lots of flavor) and coming up short, I decided to make my own. This soup is FANTASTIC! Lots of veggies and sweet & spicy flavor. My husband said it was one of the best clam chowders he's ever had 🙌🏼
2 TB butter
2 TB flour
1 white onion, diced
2 large carrots, diced
2 stalks celery, diced
1 cup frozen corn
2 russet potatoes, diced
3 cups 1% milk
1 cup chicken broth
2 10oz cans clams, drained and juice preserved
2 bay leaves
1 tsp old bay seasoning
salt & pepper to taste
In a large pot, melt butter. Add onions, carrots, and celery, and heat on low heat until tender, 5 to 8 minutes.
Add flour and stir 1 to 2 minutes.
Add the milk, chicken broth, reserved clam juice, potatoes, bay leaf, old bay seasoning and salt & pepper to taste.
Bring to a boil, then cover and cook on low until potatoes are soft, about 10 minutes.
Remove more than half of the soup and discard bay leaves, put soup in blender and blend until smooth. Return to pot.
Add clams, corn and adjust salt if needed and cook another 5 minutes.
Serve and garnish with more old bay seasoning.
